This is one of the easiest recipes you can make. Just take the dry ingredients, mix with wet ingredients, bake, and you’re done. With that said below are the instructions to make a loaf of banana bread. I like to add other fruits to my bread, like blueberries or raisins. I recommend that you try different things with the recipe. This recipe is a combination of this Alton Brown recipe with my own changes. 4 | Medium to Large Bananas |
2 | Large Eggs |
1 tsp | Baking Soda |
1 cup | Granulated Sugar |
1 tsp | Iodized Salt |
8 tsp | Butter (salted or unsalted work) |
1 tsp | Vanilla Extract |
1 tsp | Cinnamon |
1 1/3 cup | Flour (All Purpose works just fine) |
2/3 cup | Oat Flour |
2/3 cup | Dried fruit like raisins or “1/3 cup fresh fruit like Blueberries + 1/4 cup of flour” |
Instructions
- Preheat your oven to 350 degrees.
- Grease your bread pan (I use Crisco) and set it aside. Pro tip cut a piece of parchment paper and line the long edges and bottom for quick release.
- Install your paddle attachment to you stand mixer
- Add banans and set your mixer to 2 or slow setting
- Add ingredients in order of the list
- Thoroughly mix ingredients making sure that everything is incorporated.
- That’s it, pour the batter into the baking pan and cook for 1 hour. it could go for up to 30 minutes more depending on pan and oven. The easy way to check is to use a toothpick. If it comes out clean, you are done.
- Let sit in the pan for 15 minutes on the counter.
- Slice and store in an airtight container, it will last up to 5 days if it makes it that long.

Like I initially said, this is an easy recipe. From start to finish, it takes about an hour-and-a-half. The end result is a healthy, nutritious, and great tasting bread. This recipe is meant to be changed. Want less sugar? Remove it. Do you have a gluten allergy? Change to gluten-free flour.
